Vanilla Pecan Pralines

Ingredients (Makes about 12–15 pralines)

  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • ½ cup heavy cream
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1½ cups pecan halves
  • Pinch of salt

Instructions

  1. Prep
    • Line a baking sheet with parchment paper or a silicone mat.
  2. Cook sugar mixture
    • In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and cream.
    • Stir constantly until mixture reaches 238°F (soft-ball stage) on a candy thermometer (about 10–12 minutes).
  3. Add butter and pecans
    • Remove from heat and stir in butter, pecans, vanilla, and a pinch of salt.
  4. Cool slightly & scoop
    • Let mixture sit 1–2 minutes to thicken slightly.
    • Drop spoonfuls onto prepared baking sheet.
  5. Set
    • Allow pralines to cool completely at room temperature (about 30–45 minutes).

Tips

  • Use a candy thermometer for best results; sugar temperature is key.
  • Stir gently after adding butter and vanilla to avoid crystallization.
  • For a creamier texture, add a tablespoon of light corn syrup during cooking.
