Banana muffins

Here’s a simple and delicious Banana Muffins recipe 🍌🧁—perfect for breakfast or a snack.


Banana Muffins

Ingredients (Makes 12 muffins)

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 ripe bananas, mashed
  • ⅓ cup butter, melted (or vegetable oil)
  • ½ cup sugar (or honey)
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven
    • Heat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. Mix dry ingredients
    • In a bowl, combine flour, baking powder, baking soda, and salt.
  3. Mix wet ingredients
    • In another bowl, mash bananas. Add melted butter, sugar, egg, and vanilla. Mix well.
  4. Combine
    • Stir wet ingredients into dry ingredients until just combined (don’t overmix).
    • Fold in nuts or chocolate chips if using.
  5. Fill muffin tin
    • Spoon batter into muffin cups, filling about ⅔ full.
  6. Bake
    • Bake 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & serve
    • Let muffins cool for a few minutes before removing from tin. Serve warm or room temperature.

Tips

  • Use very ripe bananas for maximum sweetness and banana flavor.
  • For extra moist muffins, add 2–3 tbsp sour cream or yogurt to the batter.
  • Store in an airtight container at room temperature for 2–3 days, or freeze for longer storage.
