French Onion Meatloaf

Ingredients (Serves 4–6)

For the meatloaf:

  • 1½ lb ground beef (or half beef, half pork)
  • 1 cup French onion soup (canned or homemade)
  • 1 egg
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme (optional)

For the topping:

  • ½ cup French onion soup
  • 2 tbsp ketchup or bbq sauce
  • ½ cup shredded cheese (Swiss, cheddar, or Gruyère—optional)

Instructions

1. Preheat oven

  • Heat oven to 350°F (175°C).
  • Grease a loaf pan or line with parchment paper.

2. Make the meatloaf mixture

  1. In a large bowl, combine ground beef, egg, breadcrumbs, chopped onion, garlic, Worcestershire sauce, salt, pepper, thyme, and 1 cup French onion soup.
  2. Mix gently until just combined (don’t overmix to keep it tender).

3. Shape and bake

  • Form the mixture into a loaf in a greased pan.
  • Spread ½ cup French onion soup mixed with ketchup over the top.
  • Bake 55–65 minutes, or until internal temperature reaches 160°F (71°C).

4. Add cheese (optional)

  • If using cheese, sprinkle over the meatloaf during the last 10 minutes of baking.

5. Rest and serve

  • Let meatloaf rest 5–10 minutes before slicing.
  • Serve with mashed potatoes, roasted vegetables, or a side salad.

Tips

  • For extra French onion flavor, caramelize onions first and add to the mixture.
  • Leftovers make great sandwiches.
