Beef Fajitas

Ingredients (Serves 3–4)

For the beef:

  • 1 lb flank steak or skirt steak, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of 1 lime

For the vegetables:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1–2 tbsp olive oil
  • Salt & pepper, to taste

To serve:

  • Flour or corn tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, cilantro

Instructions

1. Marinate beef

  1. In a bowl, mix olive oil, garlic, chili powder, cumin, paprika, salt, pepper, and lime juice.
  2. Toss beef slices in the marinade and let sit 15–30 minutes (or up to 2 hours for more flavor).

2. Cook vegetables

  • Heat 1–2 tbsp olive oil in a large skillet over medium-high heat.
  • Sauté onions and bell peppers 4–5 minutes until tender-crisp. Remove from skillet and set aside.

3. Cook beef

  • In the same skillet, add beef slices in a single layer.
  • Cook 2–4 minutes per side until browned and cooked to your liking.

4. Combine

  • Return vegetables to the skillet, toss with beef, and heat 1–2 minutes.

5. Serve

  • Warm tortillas, then fill with beef and vegetable mixture.
  • Add your favorite toppings and serve immediately.

Tips

  • Slice beef thinly against the grain for maximum tenderness.
  • For extra flavor, add a splash of soy sauce or Worcestershire sauce to the marinade.
  • You can also finish with a squeeze of lime juice and fresh cilantro before serving.
