Ingredients (1–2 servings)

  • 4 large eggs
  • 2 tbsp milk or cream (optional)

  • 1 tbsp butter
  • Toasted bread (white, sourdough, or wheat)

Instructions

  1. Whisk eggs with a pinch of salt (and milk/cream if using).
  2. Melt butter in a nonstick pan over low–medium heat.
  3. Pour in eggs and let sit 10–15 seconds.
  4. Gently stir with a spatula, pushing from edges to center.
  5. Cook slowly until soft and just set (remove while slightly glossy).
  6. Season with pepper.
  7. Spoon over hot toast.
