Serves 4

Ingredients

  • 4–5 Italian sausages (mild or hot, pork or chicken)
  • 2 tbsp olive oil
  • 3 bell peppers (mix of red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning or dried oregano
  • ¼ tsp red pepper flakes (optional)
  • ½ cup marinara sauce or crushed tomatoes (optional, for saucy version)
  • Hoagie rolls or crusty bread (optional, for sandwiches)

Instructions

  1. Brown the sausages
    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add sausages and brown on all sides (about 8–10 minutes).
    • Remove sausages and set aside (they’ll finish cooking later).
  2. Cook peppers & onions
    • Add remaining olive oil to the same skillet.
    • Add onions and peppers; sauté 6–8 minutes until softened and lightly caramelized.
    • Stir in garlic, salt, pepper, Italian seasoning, and red pepper flakes.
  3. Combine & simmer
    • Slice sausages or leave whole, then return to the skillet.
    • Add marinara sauce if using.
    • Cover and simmer 10–15 minutes until sausages are fully cooked (160°F for pork).
  4. Serve
    • Serve hot as-is, over pasta or rice, or stuffed into toasted hoagie rolls.

Tips for the Best Sausage & Peppers

  • Caramelization = flavor: Let peppers and onions cook until slightly browned.
  • Saucy vs dry: Traditional versions can go either way—both are delicious.
  • Make it NYC-style: Add more sauce and serve on a crusty roll.
  • Extra richness: Splash in a little red wine while cooking peppers.
