Instructions

1. Prep the seafood

  • Lobster:
    • Cut shell lengthwise with kitchen shears.
    • Loosen meat and lift slightly above shell.
  • Scallops:
    • Pat VERY dry with paper towels (key for a good sear).
    • Season lightly with salt and pepper.

2. Cook the lobster

  1. Heat 1 tbsp olive oil + 1 tbsp butter in a large skillet over medium heat.
  2. Add lobster tails meat-side down.
  3. Cook 2–3 minutes, flip, and cook another 2–3 minutes until opaque.
  4. Remove and tent with foil.

3. Sear the scallops

  1. Increase heat to medium-high.
  2. Add remaining olive oil.
  3. Place scallops in pan (don’t crowd).
  4. Sear 2–3 minutes per side until golden crust forms.
  5. Remove scallops.

4. Make garlic butter sauce

  1. Lower heat to medium.
  2. Add remaining butter and garlic.
  3. Cook 30–45 seconds (don’t brown).
  4. Stir in lemon juice and red pepper flakes (if using).

5. Combine & serve

  • Return lobster and scallops to pan.
  • Spoon garlic butter over seafood.
  • Sprinkle with parsley and serve immediately.
