Instructions

1️⃣ Prep

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Cook veggies & bacon

  • Cook bacon until crispy, drain, chop.
  • Sauté onion and bell pepper in a little bacon fat or butter until soft.

3️⃣ Assemble casserole

  • Spread cubed bread evenly in the dish.
  • Sprinkle cooked bacon, onions, peppers, and 1½ cups cheese over bread.

4️⃣ Make custard

  • Whisk eggs, milk, Dijon (if using), salt & pepper.
  • Pour evenly over bread and toppings, pressing lightly to soak bread.

5️⃣ Bake

  • Cover with foil, bake 30 min.
  • Remove foil, sprinkle remaining ½–1 cup cheese, bake 15 more min until golden and set.

6️⃣ Serve

  • Let cool 5 min before cutting.
  • Garnish with green onions or herbs.
