Pineapple Pound Cake Recipe

Ingredients:

1. Preheat Oven:

2. Mix Dry Ingredients:

  • In a bowl, whisk together flour, baking powder, and salt.

3. Cream Butter and Sugar:

  • In a large bowl, beat butter and sugar until light and fluffy, about 2–3 minutes.

4. Add Eggs and Vanilla:

  • Beat in the eggs, one at a time, then stir in vanilla extract.

5. Incorporate Pineapple and Flour:

  • Mix in crushed pineapple.
  • Gradually add the flour mixture, alternating with milk, beginning and ending with flour. Mix until just combined.

6. Bake:

  • Pour the batter into the prepared loaf pan.
  • Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

7. Optional Glaze:

  • Mix powdered sugar and pineapple juice until smooth.
  • Drizzle over the cooled cake for extra sweetness and shine.

Tips:

  • Drain Pineapple Well: Too much juice can make the cake soggy.
  • Add Texture: Optional chopped nuts (like pecans) can be folded in for a nutty crunch.
