šŸ’ Black Cherry Jell-O Salad

Ingredients

  • 1 (3 oz) box black cherry Jell-O
  • 1 cup boiling water
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup black cherries, pitted & halved
    (fresh or canned—drain if canned)
  • 1 cup mini marshmallows
  • 1 cup Cool Whip (thawed)
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Dissolve Jell-O
    In a large bowl, pour boiling water over Jell-O and stir until fully dissolved.
  2. Add Pineapple
    Stir in crushed pineapple with the juice.
  3. Chill Slightly
    Refrigerate about 30–45 minutes, until thickened but not fully set.
  4. Fold in the Good Stuff
    Gently fold in cherries, marshmallows, Cool Whip, and nuts (if using).
  5. Set
    Chill 2–4 hours until firm.

  • Creamy version: Add 4 oz softened cream cheese when folding in Cool Whip
  • Lighter: Use sugar-free Jell-O + light Cool Whip
  • Extra cherry: Add a splash of cherry juice or Kirsch
  • No nuts: Totally fine—still amazing
