Instructions

1. Prep Oven & Pan

  • Preheat oven to 350°F (175°C).
  • Grease and flour a 9×5-inch loaf pan.

2. Mix Dry Ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, and salt.

3. Mix Wet Ingredients

  • In another bowl, whisk sugar, eggs, oil, orange juice, orange zest, and vanilla until smooth.

4. Combine

  • Gradually fold dry ingredients into wet ingredients until just combined.
  • Gently fold in cranberries (and nuts if using).

5. Bake

  • Pour batter into prepared loaf pan.
  • Bake 50–60 minutes until a toothpick inserted in the center comes out clean.
  • Let cool in pan 10 minutes, then remove to wire rack to cool completely.

  • Mix ½ cup powdered sugar with 1–2 tbsp orange juice.
