Mexican Taco Lasagna is pure comfort chaos—in the best way. Here’s a simple, crowd-pleasing version with max flavor and minimal fuss.


🌮 Mexican Taco Lasagna (Easy & Cheesy)

🛒 Ingredients

  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning (or DIY)
  • 1 can black beans, drained
  • 1 cup corn (canned or frozen)
  • 1 cup salsa or enchilada sauce
  • 2 cups shredded cheese (Mexican blend or cheddar + Monterey Jack)
  • 10–12 corn or flour tortillas
  • Optional but 🔥: diced green chiles, jalapeños, olives

👩‍🍳 Instructions

  1. Brown the meat
    Cook ground beef, drain fat, add taco seasoning + a splash of water.
  2. Mix the filling
    Stir in beans, corn, salsa (and any extras). Simmer 5 min.
  3. Layer like lasagna
    In a greased baking dish:

    • Tortillas (tear to fit)
    • Meat mixture
    • Cheese
      Repeat 2–3 times. Finish with cheese on top 😏
  4. Bake
    • Cover with foil
    • Bake at 375°F (190°C) for 25 min
    • Uncover & bake 10 more min until bubbly
  5. Rest
    Let it sit 10 min so it slices clean.
