Cabbage soup

Here’s a simple, cozy cabbage soup recipe 🥬🍲
It’s warm, filling, and easy to adjust.

Ingredients (serves ~4–6)

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ head green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14–15 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • Salt and black pepper, to taste
  • ½ tsp paprika or thyme (optional)
  • 1 bay leaf (optional)

Instructions

  1. Sauté the base
    Heat oil in a large pot. Cook onion for 3–4 minutes until soft. Add garlic and cook 30 seconds.
  2. Add vegetables
    Stir in cabbage, carrots, and celery. Cook 5 minutes, stirring occasionally.
  3. Simmer
    Add tomatoes, broth, and seasonings. Bring to a boil, then reduce heat and simmer 25–30 minutes until vegetables are tender.
  4. Taste & serve
    Remove bay leaf. Adjust salt and pepper. Serve hot.

Optional Add-Ins

  • Protein: sausage, ground beef, or chicken
  • Extra flavor: splash of apple cider vinegar or lemon juice
  • Hearty: add potatoes or rice
  • Spicy: pinch of red pepper flakes 🌶️
