Here’s a hearty, wholesome Oatmeal Flax Bread that’s soft inside with a slightly nutty flavor 🍞


Oatmeal Flax Bread

Ingredients

  • 2¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm water (about 110°F / warm, not hot)
  • 2 tablespoons honey or sugar
  • 2 tablespoons olive oil or melted butter
  • 1 cup rolled oats (old-fashioned)
  • ⅓ cup ground flaxseed (flax meal)
  • 1 teaspoon salt
  • 2½–3 cups all-purpose or bread flour

Instructions

  1. Activate yeast: In a large bowl, mix warm water, honey, and yeast. Let sit 5–10 minutes until foamy.
  2. Add ingredients: Stir in oil, oats, flaxseed, salt, and 2½ cups flour.
  3. Knead: Knead by hand or mixer until dough is soft and slightly tacky, adding more flour if needed.
  4. First rise: Place dough in a greased bowl, cover, and let rise 1 hour or until doubled.
  5. Shape: Punch down dough and shape into a loaf. Place in a greased loaf pan.
  6. Second rise: Cover and rise 30–45 minutes until just above the pan.
  7. Bake at 375°F (190°C) for 30–35 minutes, until golden and sounds hollow when tapped.
  8. Cool completely before slicing.

Tips & Variations

  • Brush top with honey butter after baking for softness
  • Sprinkle oats or seeds on top before baking
  • Substitute half whole wheat flour for a heartier loaf
  • Great for toast, sandwiches, or breakfast
