Hawaiian Bliss Roasted Chicken

Ingredients

Chicken

  • 1 whole roasting chicken (about 3–4 lbs)
  • Salt & pepper, to taste
  • 2–3 tbsp olive oil or melted butter

Tropical Glaze

  • 1 cup pineapple juice (canned or fresh)
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 3 tbsp brown sugar
  • 2–3 cloves garlic, minced
  • 1–2 tbsp rice vinegar (or apple cider vinegar)
  • 1–2 tsp grated fresh ginger (optional)
  • 1–2 tsp sesame oil (optional)

Optional Garnish

  • Lime wedges
  • Chopped cilantro
  • Pineapple slices

Instructions

1. Prepare the Chicken

  1. Preheat oven to 375°F (190°C).
  2. Pat the whole chicken dry and rub all over with olive oil or melted butter. Season generously with salt and pepper.

2. Make the Hawaiian Glaze

  1. In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, garlic, vinegar, ginger, and sesame oil until well combined.

3. Roast

  1. Place the chicken breast‑side up in a roasting pan. Pour half of the glaze over the chicken.
  2. Roast in the oven for about 1 hour 15 minutes to 1 hour 30 minutes, basting with the glaze every 20–25 minutes. The chicken is done when the juices run clear and internal temperature at the thickest part reads 165°F (74°C).
  3. In the last 10 minutes, brush with the remaining glaze for a sticky, caramelized finish.

4. Rest & Serve

  1. Let the chicken rest 10 minutes before carving.
  2. Garnish with lime wedges, cilantro, and optional pineapple slices. Serve with rice or veggies.

Tips

  • For even more tropical flavor, add pineapple chunks in the roasting pan around the chicken.
