Jerk Chicken Thighs with Rice and Green Beans

Ingredients

For the Jerk Chicken

  • 4–6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2–3 tablespoons jerk seasoning (store-bought or homemade)
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Salt & pepper, to taste

For the Rice

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • ½ teaspoon salt

For the Green Beans

  • 1 lb fresh green beans, trimmed
  • 1 tablespoon olive oil or butter
  • 1 clove garlic, minced (optional)
  • Salt & pepper, to taste

Instructions

1. Prepare the Chicken

  1. Rub chicken thighs with olive oil, jerk seasoning, garlic, lime juice, salt, and pepper.
  2. Marinate for at least 30 minutes (or overnight for more flavor).

2. Cook the Chicken

Oven method:

  • Preheat oven to 400°F (200°C).
  • Place chicken on a baking sheet and roast 35–40 minutes until cooked through (internal temp 165°F / 74°C) and skin is crispy.

Skillet method:

  • Heat a skillet over medium heat. Sear chicken 5–7 minutes per side until golden, then cover and reduce heat to cook through 15–20 minutes.

3. Cook the Rice

  • Rinse rice under cold water.
  • In a saucepan, bring water or broth and salt to a boil. Add rice, reduce heat, cover, and simmer 15–20 minutes until tender. Fluff with a fork.

4. Cook the Green Beans

  • Heat olive oil or butter in a skillet over medium heat.
  • Add garlic, then green beans. Sauté 5–7 minutes until tender-crisp. Season with salt and pepper.

5. Serve

  • Plate the chicken with rice and green beans on the side. Optionally drizzle with lime juice or sprinkle fresh herbs.

Tips

  • Extra heat: Add a pinch of cayenne or fresh chopped Scotch bonnet peppers to the jerk seasoning.
  • One-pan option: Bake chicken and toss green beans in the last 10 minutes of roasting for easier cleanup.
