Pork chops and potatoes is a classic, comforting meal that’s easy to prepare and always satisfying. You can make it in a variety of ways, but here’s a simple and delicious pan-seared pork chops with roasted potatoes recipe:

Ingredients:

For the Pork Chops:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 tbsp olive oil (or vegetable oil)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (optional, for extra flavor)
  • 1 tbsp butter (for extra flavor)
  • 2 cloves garlic, smashed (optional, for flavor)
  • Fresh herbs (like thyme or rosemary, optional)

For the Potatoes:

  • 4 medium potatoes (Yukon Gold or Russet potatoes work well)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp dried oregano (or thyme/rosemary for extra flavor)
  • 1/2 tsp paprika (optional, for color and flavor)
  • Fresh parsley (optional, for garnish)

Instructions:

1. Prepare the potatoes:

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes, then cut them into bite-sized cubes (about 1-inch pieces).
  • In a large bowl, toss the potato cubes with olive oil, salt, pepper, garlic powder, oregano, and paprika. Make sure they’re evenly coated.
  • Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or foil.
  • Roast in the oven for about 30-40 minutes, tossing halfway through, until they’re golden and crispy on the outside and tender on the inside.

2. Cook the pork chops:

  • While the potatoes are roasting, heat a large skillet over medium-high heat and add the olive oil.
  • Season both sides of the pork chops with salt, pepper, garlic powder, onion powder, and smoked paprika (if using).
  • Once the oil is hot, add the pork chops to the skillet and sear for about 4-5 minutes on each side until golden brown. The internal temperature should reach 145°F (63°C) when done.
  • Once the pork chops are almost cooked through, reduce the heat to medium-low and add the butter, smashed garlic, and fresh herbs (if using) to the pan.
  • Spoon the melted butter and garlic over the chops as they finish cooking. This will add richness and flavor.
  • Remove the pork chops from the skillet and let them rest for about 5 minutes.

3. Serve:

  • Once the pork chops and potatoes are done, plate them up.
  • Sprinkle the roasted potatoes with fresh parsley for a pop of color.
  • Serve the pork chops alongside the potatoes for a hearty, flavorful meal.

Tips:

  • For extra juicy pork chops: If you want your pork chops to be extra tender and juicy, you can brine them in a mixture of water and salt for about 30 minutes before cooking. This helps retain moisture.
  • Add veggies: You can add a side of sautéed veggies, like green beans or broccoli, to round out the meal.
  • Variation: You can also make pork chops with mashed potatoes if you prefer a creamier side instead of roasted potatoes. Just boil and mash the potatoes with butter, cream, and garlic.
