Potato pancake

Here’s a classic Potato Pancake recipe — crispy on the outside, tender on the inside 🥔✨


Potato Pancakes (Latkes)

Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs
  • 3 tablespoons all-purpose flour (or matzo meal)
  • Salt & pepper, to taste
  • Vegetable oil, for frying
  • Optional garnish: sour cream or applesauce

Instructions

1. Prepare the Potatoes

  1. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. Transfer to a large bowl and mix with grated onion.

2. Make the Batter

  1. Stir in eggs, flour, salt, and pepper until well combined.

3. Fry the Pancakes

  1. Heat 2–3 tablespoons of oil in a large skillet over medium-high heat.
  2. Spoon 2–3 tablespoons of potato mixture per pancake into the skillet and flatten slightly.
  3. Cook 3–4 minutes per side, or until golden brown and crispy.
  4. Remove and drain on paper towels.

4. Serve

  1. Serve hot with sour cream, applesauce, or your favorite toppings.

Tips

  • For extra crispiness, fry in batches without overcrowding the pan.
  • You can add garlic, herbs, or cheese to the batter for more flavor.
  • Keep cooked pancakes warm in a low oven while frying the rest.

I can also give a baked version that’s lighter but still crispy if you want.
