Potato Pancakes (Latkes)
Ingredients
- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs

- Optional garnish: sour cream or applesauce
Instructions
1. Prepare the Potatoes
- Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- Transfer to a large bowl and mix with grated onion.
2. Make the Batter
- Stir in eggs, flour, salt, and pepper until well combined.
3. Fry the Pancakes
- Heat 2–3 tablespoons of oil in a large skillet over medium-high heat.
- Spoon 2–3 tablespoons of potato mixture per pancake into the skillet and flatten slightly.
- Cook 3–4 minutes per side, or until golden brown and crispy.
- Remove and drain on paper towels.
4. Serve
- Serve hot with sour cream, applesauce, or your favorite toppings.
Tips
