Loaded Shrimp & Beef Nachos

Ingredients

  • 1/2 lb ground beef
  • 1/2 lb shrimp, peeled and deveined
  • 1 bag tortilla chips
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • Optional toppings: jalapeños, diced tomatoes, sliced olives, sour cream, guacamole, chopped cilantro

Instructions

1. Cook the Beef

  1. In a skillet over medium heat, cook ground beef with diced onion, garlic, chili powder, cumin, salt, and pepper until browned. Drain excess fat. Set aside.

2. Cook the Shrimp

  1. In the same skillet, sauté shrimp with a little olive oil, salt, and pepper until pink and opaque (2–3 minutes per side). Set aside.

3. Assemble Nachos

  1. Preheat oven to 375°F (190°C).
  2. Spread tortilla chips on a baking sheet or oven-safe dish.
  3. Sprinkle half of the shredded cheeses over the chips.
  4. Evenly distribute cooked beef, shrimp, bell peppers, and onions.
  5. Top with remaining cheese.

4. Bake

  1. Bake in the preheated oven for 8–10 minutes, or until cheese is melted and bubbly.

5. Serve

  1. Top with optional toppings like jalapeños, diced tomatoes, sour cream, guacamole, and cilantro. Serve immediately.

Tips

  • Use day-old chips to prevent sogginess when baking.
  • Add black beans or corn for extra texture and flavor.
  • For extra heat, sprinkle red pepper flakes or hot sauce over the nachos before serving.
