Chicken and rice soup

Ahh, cozy classic. 🥣 Here’s a simple, comforting chicken and rice soup you can make without fuss—perfect for cold days or when you just want something soothing.

Easy Chicken & Rice Soup

Ingredients

  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 lb chicken (breast or thighs)
  • ¾ cup rice (white or jasmine work great)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp dried thyme or oregano
  • Optional: bay leaf, parsley, lemon

Instructions

  1. Sauté the veggies
    Heat oil in a large pot. Add onion, carrots, and celery. Cook 4–5 minutes until soft. Add garlic and cook 30 seconds.
  2. Add broth & chicken
    Pour in chicken broth. Add chicken, salt, pepper, thyme, and bay leaf if using. Bring to a gentle boil.
  3. Simmer
    Lower heat and simmer 15–20 minutes, until chicken is fully cooked.
  4. Shred chicken
    Remove chicken, shred it with two forks, then return it to the pot.
  5. Add rice
    Stir in rice and simmer another 15–20 minutes, until rice is tender.
  6. Finish
    Taste and adjust seasoning. Add chopped parsley or a squeeze of lemon if you like.

  • Creamy: stir in a splash of cream or milk
  • Hearty: add mushrooms or spinach
  • Extra soothing: ginger or a little turmeric
