Roasted Potatoes

Ingredients

  • 2 lb potatoes (Yukon gold, red, or russet), cut into chunks
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder or minced garlic
  • 1 teaspoon paprika or smoked paprika
  • Optional: rosemary, thyme, or Parmesan cheese

Instructions

  1. Preheat oven
    • Preheat to 425°F (220°C).
  2. Prep potatoes
    • Rinse and dry potatoes well.
    • Cut into even-sized chunks for even cooking.
  3. Season
    • Toss potatoes with olive oil, salt, pepper, garlic, paprika, and optional herbs.
  4. Roast
    • Spread potatoes in a single layer on a baking sheet.
    • Roast 35–45 minutes, flipping halfway, until golden and crispy.
  5. Serve
    • Finish with extra salt, herbs, or grated Parmesan if desired.

Tips for Extra Crispiness

  • Use parchment or foil, not a crowded pan.
  • Let potatoes sit in hot oven 5 minutes after turning off heat.
  • For extra crunch, parboil potatoes 8–10 minutes before roasting.
