1. Prep the chicken

  • Use bone-in pieces (drumsticks, thighs, wings, breasts cut in half).
  • Rinse (optional), then pat completely dry with paper towels.
  • Season generously with salt and pepper on all sides.

2. Marinate / soak (key for juicy chicken)

This step makes a huge difference.

Classic buttermilk soak

  • Mix: buttermilk + salt + pepper
    Optional add-ins: paprika, garlic powder, onion powder, hot sauce
  • Submerge chicken, cover, and refrigerate at least 2 hours, ideally overnight.

No buttermilk?
Use milk + a splash of vinegar or lemon juice.


3. Make the coating

In a large bowl or bag, mix:

  • All-purpose flour
  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Onion powder
  • (Optional) cayenne for heat

Pro move:
Add 1–2 tablespoons of the buttermilk marinade into the flour and rub it in with your fingers. This creates little clumps → extra crunch.


4. Dredge the chicken

  • Take chicken out of the marinade, let excess drip off.
  • Coat thoroughly in the seasoned flour.
  • Press the flour onto the chicken so it sticks.
  • Set coated pieces on a rack and rest 10–15 minutes (helps the crust stay on).

5. Heat the oil

  • Use a heavy pan or Dutch oven.
  • Oil depth: about 1–1½ inches.
  • Best oils: peanut, vegetable, or canola.
  • Heat to 325–350°F (165–175°C).

No thermometer?
Drop in a pinch of flour—if it sizzles immediately, you’re close.


6. Fry the chicken

  • Carefully place chicken in the oil (don’t crowd the pan).
  • Fry in batches.
  • Turn occasionally for even browning.

Cook times (approximate):

  • Wings: 8–10 minutes
  • Drumsticks/thighs: 12–15 minutes
  • Breast pieces: 15–18 minutes

Internal temp should hit 165°F (74°C).


7. Drain & rest

  • Remove chicken and place on a wire rack (not paper towels).
  • Rest 5–10 minutes so juices settle and crust stays crisp.

8. Eat immediately 😄

Best served hot with:

  • Mashed potatoes
  • Biscuits
  • Coleslaw
  • Hot sauce or honey
