Instructions

  1. Prepare the peach filling:
    • In a small saucepan, combine the diced peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice.
    • Cook over medium heat for 3–5 minutes until the mixture thickens slightly.
    • Remove from heat and let it cool for a few minutes (don’t use hot filling, or it will tear the wrappers).
  2. Assemble the egg rolls:
    • Lay an egg roll wrapper on a clean surface with one corner pointing toward you (diamond shape).
    • Spoon about 2 tablespoons of peach filling near the corner closest to you.
    • Fold the corner over the filling, fold in the sides, and roll tightly toward the opposite corner. Seal the edge with a little water or beaten egg.
  3. Cook the egg rolls:

    Option A – Frying (crispiest):

    • Heat about 1 inch of vegetable oil in a skillet over medium heat.
    • Fry the egg rolls for 2–3 minutes per side until golden brown.
    • Drain on paper towels.

    Option B – Baking (lighter):

    • Preheat oven to 400°F (200°C).
    • Brush each egg roll with melted butter.
    • Bake on a parchment-lined sheet for 15–20 minutes, turning halfway, until golden and crisp.
  4. Serve:
    • Dust with powdered sugar or drizzle with caramel sauce.
    • Optional: serve with a scoop of vanilla ice cream for extra indulgence.
