🍗 Crack Chicken Casserole (Serves 4–6)

Ingredients

  • 2 lbs (900g) boneless, skinless chicken breasts
  • 8 oz cream cheese (softened)
  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2–3 green onions, chopped
  • Optional: garlic powder, salt, pepper to taste

Instructions

1️⃣ Cook Chicken

  • Preheat oven to 375°F (190°C).
  • Season chicken with salt, pepper, and garlic powder (optional).
  • Bake or sauté chicken until fully cooked, ~25 minutes (internal temp 165°F / 74°C).
  • Shred chicken with forks.

2️⃣ Make the Creamy Sauce

  • In a large bowl, mix cream cheese and ranch dressing until smooth.
  • Stir in shredded chicken, ½ cup cheddar cheese, and most of the bacon (reserve some for topping).

3️⃣ Bake Casserole

  • Transfer mixture to a greased baking dish.
  • Top with remaining cheddar cheese and bacon.
  • Bake 15–20 minutes until cheese is melted and bubbly.

4️⃣ Garnish & Serve

  • Sprinkle chopped green onions on top.
  • Serve with rice, pasta, or bread for a hearty meal.

  • Slow Cooker Version: Combine all ingredients (except toppings) in a slow cooker on low for 3–4 hours, then top with cheese and bacon before serving.
  • Add Veggies: Broccoli or spinach can be stirred in for extra nutrition.
