🥟 Classic Potato & Cheese Pierogi (Pierogi Ruskie)
🛒 Dough Ingredients
- 2 cups all-purpose flour
- ½ tsp salt
- 1 egg
- ½ cup sour cream
- ¼ cup butter, softened

- 2 cups mashed potatoes (cooled)
- 1 cup farmer’s cheese or ricotta
- 1 small onion, finely sautéed in butter
- Salt & black pepper to taste
🔪 Instructions
1️⃣ Make the Dough
- Mix flour and salt.
- Add egg, sour cream, and butter.
- Knead until smooth (about 5 minutes).
- Cover and rest 30 minutes.
2️⃣ Make the Filling
Mix mashed potatoes, cheese, sautéed onion, salt, and pepper until creamy.
3️⃣ Assemble
- Roll dough thin (about ⅛ inch).
- Cut 3-inch circles.
- Add 1 tablespoon filling to center.
- Fold and pinch edges tightly to seal.
4️⃣ Cook
- Boil in salted water until they float (2–3 minutes).
- Remove and optionally pan-fry in butter until golden.
