Here’s a simple, hearty Vegetable Soup 🥕🥦🍅 — easy, healthy, and customizable.


Vegetable Soup

Servings: 4–6
Time: ~30 minutes

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and cut
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • Optional: 1 cup cooked beans (chickpeas, kidney, or white beans)

Instructions

  1. Cook aromatics:
    Heat olive oil in a large pot over medium heat. Sauté onion and garlic 2–3 minutes until fragrant.
  2. Add vegetables:
    Add carrots, celery, bell pepper, and green beans. Cook 5 minutes, stirring occasionally.
  3. Add liquid & seasoning:
    Pour in diced tomatoes and vegetable broth. Add thyme, salt, and pepper.
  4. Simmer:
    Bring to a boil, then reduce heat and simmer 15–20 minutes until vegetables are tender.
  5. Add zucchini & beans:
    Stir in zucchini and cooked beans. Simmer 5 more minutes.
  6. Serve:
    Taste and adjust seasoning. Serve hot with bread or crackers.

Tips & Variations

  • Add pasta, rice, or quinoa for a heartier soup.
  • Use any vegetables you have on hand—potatoes, spinach, or corn work well.
  • For a richer flavor, add a splash of soy sauce or nutritional yeast.
