1️⃣ Prepare the Lobster Tails

  1. Preheat oven to 425°F (220°C).
  2. Using kitchen scissors, cut the top shell lengthwise, then gently pull meat out and rest it on top of the shell.
  3. Mix melted butter, garlic, paprika, lemon juice, salt, and pepper.
  4. Brush lobster meat generously with garlic butter.
  5. Bake for 12–15 minutes until lobster is opaque and cooked through.

2️⃣ Make the Risotto

  1. In a large pan, heat olive oil or butter over medium heat.
  2. Sauté onion and garlic until translucent.
  3. Add Arborio rice and stir 1–2 minutes until lightly toasted.
  4. Pour in white wine (if using) and cook until mostly absorbed.
  5. Gradually add warm broth, one ladle at a time, stirring frequently until liquid is absorbed before adding more.
