Here’s a classic beef tips with gravy served over mashed potatoes recipe — tender, flavorful, and comforting.

🥩 Ingredients (Serves 4)

For the Beef Tips

  • 1 ½ lb beef sirloin or stew meat, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 tbsp all-purpose flour (for thickening)

For the Mashed Potatoes

  • 4 cups peeled and cubed potatoes
  • ¼ cup butter
  • ½ cup milk or cream
  • Salt and pepper, to taste

🥄 Step-by-Step Instructions

1️⃣ Cook the Potatoes

  1. Place potatoes in a pot of salted water and boil 15–20 minutes until tender.
  2. Drain and mash with butter, milk, salt, and pepper until creamy. Set aside.

2️⃣ Brown the Beef

  1. Season beef with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Brown beef in batches for 3–4 minutes per side. Remove and set aside.

3️⃣ Make the Gravy

  1. In the same skillet, sauté onion and garlic until soft.
  2. Sprinkle in flour and stir for 1–2 minutes to remove raw taste.
  3. Gradually add beef broth, whisking to avoid lumps.
  4. Stir in Worcestershire sauce and thyme.
  5. Return beef to the skillet and simmer 15–20 minutes until sauce thickens and beef is tender.

4️⃣ Serve

  • Spoon mashed potatoes onto plates.
  • Top with beef tips and gravy.
  • Optional: garnish with fresh parsley.

💡 Tips for the Best Beef Tips

  • Use stew meat or sirloin tips for tender results.
  • For richer flavor, brown beef well and scrape up browned bits from the pan.
  • If gravy is too thin, mix 1 tsp cornstarch with cold water and stir in to thicken.

If you want, I can make a quick slow cooker version where beef tips and gravy cook together for a hands-off, tender meal.

Do you want me to do that?
