🍓 Strawberry Jello Cheesecake

Strawberry Jello Cheesecake is a light, fruity dessert with a creamy cheesecake base and a glossy layer of strawberry gelatin on top. It’s often served chilled and doesn’t require baking the top layer.


🥣 Ingredients (Serves 8)

For the crust:

  • 1½ cups graham cracker crumbs
  • ⅓ cup melted butter
  • 2 tbsp sugar

For the cheesecake filling:

  • 8 oz cream cheese, softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped

For the strawberry Jello layer:

  • 1 package (3 oz) strawberry gelatin
  • 1 cup boiling water
  • 1 cup sliced fresh strawberries

  1. Prepare the crust:
    • Mix graham cracker crumbs, melted butter, and sugar.
    • Press into the bottom of a 9-inch springform pan. Chill while preparing filling.
  2. Make the cheesecake filling:
    • Beat cream cheese, sugar, and vanilla until smooth.
    • Gently fold in whipped cream.
    • Spread evenly over the chilled crust.
  3. Prepare the Jello topping:
    • Dissolve strawberry gelatin in 1 cup boiling water, stirring until fully dissolved.
    • Let cool to room temperature (don’t let it set).
    • Stir in sliced strawberries.
  4. Assemble:
    • Pour the cooled Jello-strawberry mixture over the cheesecake layer.
    • Refrigerate at least 4 hours, or until fully set.
  5. Serve:
    • Carefully remove from springform pan, slice, and enjoy!

  • Use fresh or frozen strawberries depending on season.
  • For a more vibrant Jello layer, you can use slightly less water when dissolving gelatin.
  • Add whipped cream or chocolate drizzle on top for extra flair.
