Crispy fried chicken is golden, crunchy on the outside, and juicy on the inside — a classic comfort food. Here’s a reliable method to make it at home.


🥣 Ingredients (Serves 4)

  • 8 chicken pieces (legs, thighs, or drumsticks)
  • 2 cups buttermilk (or regular milk + 1 tbsp vinegar)
  • 2 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional, for heat)
  • Oil for frying (vegetable or peanut oil)

1️⃣ Marinate the Chicken

  • Place chicken in a bowl or zip-lock bag.
  • Pour buttermilk over the chicken, cover, and refrigerate 2–4 hours (or overnight).
  • This tenderizes the meat and adds flavor.

2️⃣ Prepare the Coating

  • In a large bowl, mix flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne.

3️⃣ Dredge the Chicken

  • Remove chicken from buttermilk, letting excess drip off.
  • Coat each piece thoroughly in the seasoned flour.
  • For extra crispiness, double-dredge: dip back into buttermilk, then again in flour.

4️⃣ Heat Oil

  • Pour oil into a deep pan to about 1–1.5 inches deep.
  • Heat to 350°F (175°C).

5️⃣ Fry

  • Fry chicken in batches, avoiding overcrowding, for 12–15 minutes per side (depending on size).
  • Use a meat thermometer: internal temperature should reach 165°F (74°C).

6️⃣ Drain & Rest

  • Remove chicken and place on a wire rack or paper towels to drain excess oil.
  • Let rest 5 minutes before serving.

🔹 Tips for Extra Crispy Chicken

  • Use cornstarch + flour for a crunchier coating.
  • Pat chicken dry before dredging to help the coating stick.
  • Maintain oil temperature; too low → greasy, too high → burnt coating.
  • Resting the coated chicken 10–15 minutes before frying helps it adhere better.

  • Spicy Southern: Add hot paprika, cayenne, or chili powder to the flour.
  • Herb Infusion: Mix dried thyme, oregano, or rosemary into the flour.
  • Garlic Parmesan: Toss fried chicken in a mix of grated Parmesan and garlic powder.
