Blueberry Cream Cheese Bread

Here’s a delicious recipe for Blueberry Cream Cheese Bread—soft, slightly sweet, and perfect for breakfast or dessert:


Ingredients

For the Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt
  • 1 ½ cups fresh or frozen blueberries

For the Cream Cheese Swirl:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract

Optional Glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp milk or lemon juice

Instructions

  1. Preheat Oven:
    • Set oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.
  2. Prepare Cream Cheese Filling:
    • In a small bowl, mix cream cheese, sugar, and vanilla until smooth. Set aside.
  3. Make the Batter:
    • In a medium bowl, whisk flour, baking powder, baking soda, and salt.
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Add eggs one at a time, then vanilla.
    • Mix in sour cream.
    • Gradually fold in the dry ingredients until just combined.
    • Gently fold in blueberries.
  4. Assemble Bread:
    • Pour half of the batter into the loaf pan.
    • Spoon cream cheese mixture over the batter.
    • Top with remaining batter and gently swirl with a knife for a marbled effect.
  5. Bake:
    • Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean (avoid piercing the cream cheese directly).
    • Let cool in the pan for 10 minutes, then transfer to a wire rack.
  6. Optional Glaze:
    • Mix powdered sugar with milk or lemon juice. Drizzle over cooled bread.
  7. Serve:
    • Slice and enjoy warm or at room temperature. Perfect with coffee or tea!

Tips:

  • Toss frozen blueberries in a little flour before adding to prevent them from sinking.
  • For extra flavor, add a teaspoon of lemon zest to the batter.
  • Can be stored in an airtight container for 3–4 days or frozen for longer storage.
