🛒 Ingredients (Serves 4)

Pork Chops

  • 4 bone-in or boneless pork chops (¾–1 inch thick)

  • 2 tbsp oil or butter

Gravy & Potatoes

  • 2 cups sliced potatoes (Yukon Gold or red potatoes)
  • 1 medium onion, thinly sliced
  • 2–3 cloves garlic, minced
  • 2 cups chicken or beef broth
  • 1 tsp dried thyme or rosemary
  • 1 tbsp butter (optional, for richness)
  • 2 tbsp flour (for thickening gravy)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

👩‍🍳 Instructions

1️⃣ Prep Pork Chops

  • Season pork chops with salt, pepper, and paprika.
  • Lightly dredge in flour, shaking off excess.

2️⃣ Brown Pork Chops

  • Heat oil or butter in a large skillet over medium-high heat.
  • Sear chops 2–3 minutes per side until golden brown. Remove and set aside.

3️⃣ Sauté Vegetables

  • In the same skillet, add onions and garlic. Cook 2–3 minutes until fragrant.
  • Add sliced potatoes and cook for another 3–4 minutes, stirring occasionally.

4️⃣ Make Gravy

  • Sprinkle 2 tbsp flour over veggies and stir to coat (forms a roux).
  • Slowly add broth while stirring, scraping up browned bits from the pan.
  • Add thyme/rosemary, salt, and pepper.

5️⃣ Simmer Everything

  • Return pork chops to the skillet, nestling them among potatoes.
  • Cover and simmer on low heat for 25–30 minutes, or until potatoes are tender and pork chops are cooked through (internal temp 145°F / 63°C).

6️⃣ Finish & Serve

  • Stir in butter if desired for extra richness.
  • Garnish with parsley.
  • Serve hot with extra gravy over chops and potatoes.
