Here’s a healthy, low-calorie muffin recipe for Weight-Loss Mini Muffins – Apple, Raisin & Oat that’s naturally sweetened and flourless:


Ingredients (makes ~12 mini muffins)

  • Rolled oats – 1 cup
  • Apples – 1 medium, peeled and grated
  • Raisins – ¼ cup
  • Egg – 1 large
  • Unsweetened applesauce – ¼ cup (adds moisture and natural sweetness)
  • Cinnamon – 1 tsp
  • Baking powder – 1 tsp
  • Vanilla extract – 1 tsp
  • Optional: chopped nuts (walnuts or almonds) – 2 tbsp

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin or use liners.
  2. Mix dry ingredients: In a bowl, combine oats, baking powder, cinnamon, and optional nuts.
  3. Mix wet ingredients: In another bowl, beat the egg with grated apple, applesauce, vanilla, and raisins.
  4. Combine: Stir wet ingredients into dry until well mixed. The batter will be thick.
  5. Scoop into muffin tin: Fill each mini muffin cup about ¾ full.
  6. Bake: 15–18 minutes, until tops are firm and slightly golden.
  7. Cool: Let muffins cool slightly before removing from tin.
