🌮 Oven-Baked Cheesy Tacos (Crispy & Melty)

🛒 Ingredients (Makes 10–12 tacos)
- 1 lb (450g) ground beef (or ground chicken/turkey)
- 1 packet taco seasoning (or 2 tbsp homemade)
- ½ cup water
- 1½–2 cups shredded cheddar or Mexican blend cheese
- 10–12 small flour or corn tortillas
- Cooking spray or light oil

- Diced tomatoes

👩🍳 Instructions
1️⃣ Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2️⃣ Cook the filling:
Brown meat in a skillet over medium heat. Drain excess fat.
Add taco seasoning and water. Simmer 3–5 minutes until thickened.
3️⃣ Warm tortillas briefly (microwave 20–30 seconds) so they don’t crack.
4️⃣ Assemble tacos:
Place tortillas flat on the baking sheet.
Add cooked meat on one half and top generously with cheese.
Fold over gently and press slightly.
5️⃣ Lightly spray tops with cooking spray for crispiness.
6️⃣ Bake 12–15 minutes until tortillas are golden and crispy and cheese is melted.
7️⃣ Rest 3–5 minutes, then add fresh toppings and serve.

Bake them standing upright in a taco rack or wedged between crumpled foil so heat circulates evenly.
