Ingredients

  • 1–1½ cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 2–3 tbsp mayonnaise (adjust for creaminess)
  • 1 tsp Dijon mustard (optional)
  • 1 celery stalk, finely chopped
  • 2–3 tbsp red onion, finely chopped (optional)
  • Salt & pepper, to taste
  • 2 slices of bread, sandwich rolls, or croissants
  • Optional: lettuce, tomato, pickles, or avocado slices

Instructions

  1. Make the chicken salad
    • In a bowl, combine chicken, mayonnaise, Dijon mustard, celery, and onion.
    • Season with salt and pepper. Mix until well combined.
  2. Assemble sandwich
    • Place a layer of lettuce or tomato (optional) on the bread.
    • Spread the chicken salad evenly. Top with the second slice of bread.
  3. Serve
    • Cut in half and enjoy immediately, or wrap for later.
