Creamy Cucumber Salad

Ingredients

  • 2 medium cucumbers, thinly sliced
  • ½ small red onion, thinly sliced (optional)
  • ½ cup sour cream or Greek yogurt
  • 1–2 tsp white vinegar or lemon juice
  • 1 tsp sugar (optional, balances acidity)
  • 1 tsp fresh dill or ½ tsp dried dill
  • Salt & pepper, to taste

Instructions

  1. Prepare cucumbers
    • Slice cucumbers thinly. If desired, sprinkle with a little salt and let sit 5–10 minutes to draw out excess water. Pat dry.
  2. Make dressing
    • In a bowl, combine sour cream (or Greek yogurt), vinegar/lemon juice, sugar, dill, salt, and pepper. Mix well.
  3. Toss salad
    • Add cucumbers and onion slices to the dressing. Toss gently to coat.
  4. Chill & serve
    • Refrigerate for at least 10 minutes to let flavors meld. Serve cold.
