Sausage and Potato Casserole

Ingredients (Serves 4–6)

  • 1 lb (450 g) sausage links (mild or spicy), sliced
  • 4–5 medium potatoes, peeled and diced into ½-inch cubes
  • 1 small onion, chopped
  • 1 bell pepper (any color), chopped
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tbsp butter or oil (for greasing casserole dish)

Instructions

  1. Preheat oven
    • Heat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. Cook sausage
    • In a skillet over medium heat, cook sausage slices until browned. Remove and set aside.
  3. Prepare potatoes
    • Boil diced potatoes in salted water 5–7 minutes until slightly tender but not mushy. Drain.
  4. Mix casserole
    • In a large bowl, combine potatoes, cooked sausage, onion, bell pepper, half of the cheese, salt, pepper, and garlic powder.
  5. Add eggs & milk
    • Whisk eggs with milk and pour over potato mixture. Stir gently to combine.
  6. Assemble & bake
    • Transfer mixture to casserole dish. Sprinkle remaining cheese on top.
    • Bake 25–30 minutes until cheese is melted and top is golden.
  7. Serve
    • Let sit 5 minutes before serving.

Tips

  • Add frozen peas or corn for extra veggies.
  • Use different cheeses like pepper jack for a spicy kick.
  • For a one-pan shortcut, sauté sausage, potatoes, and veggies together, then pour eggs on top and bake.
