KFC-Style Fried Chicken

Ingredients (Serves 4–6)

For the chicken:

  • 4–6 chicken pieces (drumsticks, thighs, or wings)
  • 2 cups buttermilk
  • 1 tsp salt
  • 1 tsp black pepper

For the coating:

  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional, for heat)

For frying:

  • Vegetable oil (enough for deep frying or shallow frying)

Instructions

  1. Marinate chicken
    • Mix chicken pieces with buttermilk, salt, and pepper in a bowl.
    • Cover and refrigerate at least 1 hour (overnight for best flavor).
  2. Prepare coating
    • In a large bowl, combine flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne.
  3. Coat chicken
    • Remove chicken from buttermilk and dredge in flour mixture.
    • Press flour onto chicken to ensure a thick, even coating.
  4. Fry chicken
    • Heat oil in a deep skillet or fryer to 350°F (175°C).
    • Fry chicken pieces 12–15 minutes (depending on size), turning occasionally, until golden brown and cooked through (internal temperature 165°F / 74°C).
    • Remove and drain on paper towels.
  5. Serve
    • Serve hot with your favorite sides like mashed potatoes, coleslaw, or biscuits.

Tips

  • For extra crunch, double-dip: dip chicken back in buttermilk and flour again before frying.
  • Don’t overcrowd the pan; cook in batches for even frying.
  • Use a thermometer to ensure the chicken is fully cooked without overcooking.
