Classic American Pancakes

Ingredients

  • 1½ cups all-purpose flour
  • 3½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1¼ cups milk
  • 1 large egg
  • 3 tablespoons melted butter (plus extra for cooking)

Instructions

  1. Mix dry ingredients: In a large bowl, whisk flour, baking powder, salt, and sugar.
  2. Mix wet ingredients: In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine: Pour wet ingredients into dry ingredients. Stir gently until just combined — lumps are okay. Don’t overmix.
  4. Preheat skillet: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Cook pancakes: Pour ¼ cup batter per pancake onto skillet. Cook until bubbles form on the surface and edges look set (about 2–3 minutes). Flip and cook another 1–2 minutes until golden.
  6. Serve warm: Stack pancakes and serve with syrup, fruit, or your favorite toppings.

Tips

  • Fluffier pancakes: Let the batter rest 5–10 minutes before cooking.
  • Add-ins: Blueberries, chocolate chips, or mashed bananas.
  • Keep warm: Place cooked pancakes on a baking sheet in a 200°F (95°C) oven while finishing the rest.
