  • 1 cup frozen peas (added at the end for color and sweetness, optional)

Instructions:

1. Prepare the Beef:

  • Pat the beef stew meat dry with paper towels to ensure it browns properly.
  • Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.
  • Add the beef in batches (don’t overcrowd the pot) and brown it on all sides. This takes about 5-7 minutes per batch. Remove the beef and set it aside.

2. Sauté the Vegetables:

  • In the same pot, add another tablespoon of olive oil if needed. Add the onion and garlic and sauté for 2-3 minutes until softened.
  • If you’re using tomato paste, add it now and cook for another 2 minutes to deepen the flavor.

3. Simmer the Stew:

2. Mash the Potatoes:

  • Drain the potatoes and return them to the pot. Let them sit for a minute to steam off excess water.
  • Use a potato masher, ricer, or fork to mash the potatoes to your desired consistency.

3. Add Butter and Milk:

  • Add the butter to the potatoes and mash until smooth. Gradually add milk, stirring until the mashed potatoes reach your desired creaminess.
