🍪 Salted Caramel Cracker Bites (Oyster Crackers)

🛒 Ingredients

  • 1 bag oyster crackers (about 9–10 oz)
  • ½ cup butter (1 stick)
  • ½ cup brown sugar, packed
  • 3–4 tbsp light corn syrup or honey
  • 1 tsp vanilla extract
  • ¼ tsp salt (plus extra for sprinkling)

Optional toppings:

  • Drizzle of chocolate
  • Chopped nuts

  1. Prep
    • Line a baking sheet with parchment paper
    • Place oyster crackers in a large mixing bowl
  2. Make caramel
    • In a medium saucepan over medium heat:
      • Melt butter
      • Stir in brown sugar and corn syrup
      • Bring to a gentle boil, stirring constantly for 2–3 min
    • Remove from heat, stir in vanilla and salt
  3. Coat crackers
    • Pour caramel over crackers
    • Gently stir with a spatula to coat evenly
  4. Bake / set
    • Spread crackers on prepared baking sheet in a single layer
    • Bake at 350°F (175°C) for 10–12 min, stirring halfway (optional)
    • Or let cool at room temp if you prefer a chewier version
  5. Finish
    • Sprinkle lightly with flaky salt while warm
    • Optional: drizzle melted chocolate or sprinkle nuts
    • Let cool completely before breaking into clusters
