Wet

  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract

  • ½ cup raisins (optional)

Instructions

  1. Prep
    Heat oven to 350°F (175°C). Grease and flour two 9-inch round pans (or a 9×13).
  2. Mix Dry
    Whisk flour, baking soda, cinnamon, nutmeg, and salt.
  3. Mix Wet
    In a large bowl, beat sugars and oil. Add eggs one at a time, then vanilla.
  4. Combine
    Stir dry ingredients into wet just until combined.
  5. Fold In
    Gently fold in carrots, pineapple, nuts, and raisins.
  6. Bake
    • 9-inch rounds: 30–35 min
    • 9×13 pan: 40–45 min

Ingredients

  • 8 oz cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3½–4 cups powdered sugar
  • 2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Mix in vanilla and salt until fluffy.
