Here’s a tasty and hearty Cheesy Ground Beef and Rice Casserole recipe that’s simple to make and full of comfort:


Ingredients

  • Ground beef – 1 lb
  • Onion – 1 small, chopped
  • Garlic – 2 cloves, minced
  • Cooked rice – 2 cups
  • Cream of mushroom or cream of chicken soup – 1 can (10–11 oz)
  • Shredded cheddar cheese – 1–1½ cups
  • Milk – ¼ cup
  • Salt & pepper – to taste
  • Optional: frozen peas, corn, or bell peppers – 1 cup

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook beef: In a skillet, brown ground beef with chopped onion and garlic. Drain excess fat.
  3. Mix ingredients: In a large bowl, combine cooked rice, beef mixture, soup, milk, half the shredded cheese, and any optional vegetables. Season with salt and pepper.
  4. Assemble casserole: Pour mixture into the prepared baking dish. Sprinkle remaining cheese on top.
  5. Bake: 20–25 minutes until bubbly and cheese is melted.
  6. Serve: Let sit for 5 minutes before serving for easier slicing.

Tips:

  • Use leftover rice to save time.
  • Add a little paprika or Italian seasoning for extra flavor.
  • Top with crispy fried onions for a crunchy finish.
