Chicken Bubble Biscuit Bake is a super easy, comforting casserole dish that combines tender chicken, creamy sauce, and flaky biscuit pieces all baked together into a cheesy, bubbly masterpiece. It’s perfect for a quick weeknight dinner, and you can make it your own with whatever ingredients you have on hand! Here’s how to make it:

Ingredients:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great!)
  • 1 can (10.5 oz) cream of chicken soup (or you can use cream of mushroom or celery)
  • 1/2 cup sour cream (or Greek yogurt for a healthier version)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup chicken broth (or milk for a creamier texture)
  • 1 packet ranch seasoning mix (optional, but adds great flavor)
  • 1 can (16 oz) refrigerated biscuit dough (like Pillsbury Grands)
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (for greasing the baking dish)
  • Fresh parsley or chives for garnish (optional)

Instructions:

1. Preheat the oven:

  • Preheat your oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish with a little olive oil or butter.

2. Prepare the sauce:

  • In a large bowl, combine the cream of chicken soup, sour cream, shredded cheese, chicken broth (or milk), and ranch seasoning (if using).
  • Stir everything together until smooth and well mixed.
  • Season with salt and pepper to taste.

3. Add the chicken:

  • Add your cooked chicken to the sauce mixture and stir to coat the chicken evenly in the sauce.

4. Assemble the casserole:

  • Pour the chicken mixture into the prepared baking dish, spreading it out evenly.
  • Open the can of biscuit dough and cut each biscuit into quarters (you should have about 8-10 small pieces from each biscuit).
  • Scatter the biscuit pieces evenly on top of the chicken mixture. Don’t worry if some of the sauce is exposed; the biscuits will puff up and soak up some of the flavor while baking.

5. Bake:

  • Place the casserole in the oven and bake for 30-35 minutes, or until the biscuits are golden brown and cooked through, and the sauce is bubbly. If the biscuits start to brown too quickly, you can cover the casserole with aluminum foil and continue baking until the center is cooked through.

6. Serve:

  • Once done, let the casserole cool for a few minutes before serving. You can garnish with fresh parsley or chives if you want to add a pop of color and freshness.

Tips:

  • Add Veggies: You can mix in veggies like frozen peas, carrots, or corn to make it a one-pot meal. Just stir them in with the chicken and sauce mixture before adding the biscuits.
  • Make it cheesy: Add more cheese on top, or mix in some mozzarella or Parmesan for an extra cheesy topping.
  • Swap the biscuits: If you prefer a healthier version, you can use whole wheat or lower-calorie biscuit dough, or even top it with mashed potatoes instead of biscuits for a twist.
