Creamed chipped beef on toast

Ahhh, creamed chipped beef on toast—pure comfort food, old-school and unapologetic 🥰
Also known as SOS, but the good kind.

🍞🥩 Creamed Chipped Beef on Toast

Ingredients

  • 2 oz dried chipped beef, sliced into bite-size pieces
  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups milk (whole milk = richest)
  • Black pepper (don’t be shy)
  • Optional: pinch of paprika or nutmeg
  • Toasted white or Texas toast

Instructions

  1. Prep the beef
    • Rinse chipped beef briefly under warm water to remove excess salt.
    • Pat dry and chop if needed.
  2. Make the roux
    • Melt butter in a skillet over medium heat.
    • Whisk in flour and cook 1–2 minutes until smooth (no browning).
  3. Cream it up
    • Slowly whisk in milk, stirring constantly until thick and smooth.
  4. Add beef + seasoning
    • Stir in chipped beef.
    • Season with black pepper and optional paprika/nutmeg.
    • Simmer 2–3 minutes until cozy and thick.
  5. Serve
    • Spoon generously over hot toast.

Optional upgrades (still classic-adjacent)

  • 🧅 Sautéed onions before the roux
  • 🍄 Mushrooms for depth
  • 🍳 Serve over toast with a fried egg on top
  • 🥔 Pour it over hash browns or biscuits instead
