Ingredients

  • 12 oz pasta (penne, rigatoni, or fettuccine)

  • 1 tsp garlic powder
  • 3–4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 cup cherry tomatoes, halved (optional)
  • Fresh basil or parsley, chopped, for garnish

Instructions

1️⃣ Cook pasta

  • Boil salted water and cook pasta al dente
  • Drain and set aside, reserving ½ cup pasta water

2️⃣ Cook chicken

  • Heat olive oil in a large skillet over medium-high
  • Season chicken with salt, pepper, and garlic powder
  • Cook 5–7 minutes until golden and cooked through
  • Remove and set aside

3️⃣ Make creamy sauce

  • In the same skillet, sauté garlic 30–60 seconds
  • Add heavy cream and chicken broth, bring to a simmer
  • Stir in mozzarella, Parmesan, and Italian seasoning
  • Simmer 2–3 minutes until cheese melts and sauce thickens

4️⃣ Combine

  • Add cooked pasta and chicken to the skillet
  • Toss to coat evenly in the sauce
  • If too thick, add reserved pasta water 1–2 tbsp at a time

5️⃣ Optional add-ins

  • Toss in cherry tomatoes or spinach at this stage
  • Heat through 1–2 minutes

6️⃣ Serve

  • Garnish with chopped basil or parsley
  • Serve immediately
