Creamy Lime Filling

Ingredients

  • 1 can (14 oz) sweetened condensed milk
  • ½ cup fresh lime juice (about 4–5 limes)
  • 1 tablespoon lime zest
  • 4 large egg yolks
  • ½ cup heavy cream, whipped (optional for extra creaminess)

Instructions

  1. Mix base ingredients
    • In a medium bowl, whisk together sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth.
  2. Cook the filling (optional for custard-style)
    • Pour mixture into a saucepan over low heat.
    • Cook gently, stirring constantly for 5–7 minutes until slightly thickened.
    • Remove from heat and let cool slightly.
  3. Chill
    • Pour into a pre-baked pie crust, tart shell, or dessert cup.
    • Refrigerate at least 2–3 hours to set.
  4. Optional whipped cream
    • Fold in whipped cream for a lighter, fluffier filling.
  5. Serve
    • Top with extra lime zest, lime slices, or toasted coconut if desired.

Tips

  • Use fresh lime juice for the best flavor — bottled juice can taste flat.
  • For extra tartness, adjust lime juice to taste.
