Fluffy Pancakes

Ingredients

  • 1½ cups all-purpose flour
  • 3½ teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1¼ cups milk
  • 1 large egg
  • 3 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Mix dry ingredients
    • In a bowl, whisk flour, baking powder, sugar, and salt.
  2. Mix wet ingredients
    • In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine
    • Pour wet ingredients into dry ingredients.
    • Gently stir just until combined — lumps are okay (overmixing = flat pancakes).
  4. Cook
    • Heat a non-stick skillet or griddle over medium heat and lightly grease.
    • Pour about ¼ cup batter per pancake.
    • Cook until bubbles form on the surface (about 2 minutes).
    • Flip and cook 1–2 minutes until golden.
  5. Serve
    • Serve warm with butter, syrup, fruit, or whipped cream.

Tips for Extra Fluffiness

  • Do not overmix the batter
  • Let batter rest 5–10 minutes before cooking
  • Use fresh baking powder
  • Cook on medium heat — not too hot
