Fried Alligator

Ingredients

  • 1 lb alligator meat (tail or tenderloin), cut into bite-sized pieces

  • ½ teaspoon paprika

    • Place alligator pieces in buttermilk with hot sauce (if using).

  2. Prepare the breading
    • In a bowl, mix flour with salt, pepper, paprika, garlic powder, and cayenne.
  3. Heat oil
    • Fill a deep skillet or pot with about 2 inches of oil.
    • Heat to 350°F (175°C).
  4. Bread the meat
    • Remove alligator from buttermilk and dredge in the seasoned flour until fully coated.
    • Shake off excess flour.
  5. Fry
    • Fry pieces in batches 3–5 minutes, turning occasionally, until golden brown and crispy.
    • Remove and drain on paper towels.
  6. Serve
