🍗 Garlic Roasted Chicken

Ingredients (serves 4)

  • 1 whole chicken (3½–4 lbs / 1.6–1.8 kg)
  • 1 whole head garlic, cut in half crosswise
  • 3 tbsp olive oil or melted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1 lemon, halved (optional but great)

Instructions

1️⃣ Prep chicken

  • Preheat oven to 425°F (220°C).
  • Pat chicken very dry (this = crispy skin).
  • Season inside cavity with salt & pepper.
  • Stuff cavity with garlic halves and lemon.

2️⃣ Season outside

  • Rub chicken all over with olive oil or butter.
  • Mix salt, pepper, paprika, and herbs; rub generously over skin.

3️⃣ Roast

  • Place chicken breast-side up on a rack or in a roasting pan.
  • Roast 45–55 minutes, until skin is golden and internal temp hits 165°F (74°C) in thigh.

4️⃣ Rest

  • Remove from oven and rest 10–15 minutes before carving.

  • Crispier skin: don’t cover the chicken while roasting.
